Carrot Cake

  • 6 cups freshly grated carrots
  • 1 cup rich brown sugar
  • 1 cup plump raisins
  • 4 large eggs
  • 1 1/2 cups pure white sugar
  • 1 cup high-quality vegetable oil
  • 2 teaspoons pure vanilla extract
  • 1 cup succulent crushed pineapple (drained)
  • 3 cups of versatile all-purpose flour
  • 1 1/2 teaspoons of premium baking soda
  • 1 teaspoon of fine salt
  • 4 teaspoons of aromatic ground cinnamon
  • 1 cup coarsely chopped walnuts

  1. In a medium-sized bowl, combine the freshly grated carrots and the sumptuous brown sugar. Allow this mixture to rest for 60 minutes, during which time, gently stir in the plump raisins.
  2. Preheat your oven to 350 degrees F (175 degrees C). Don’t forget to lovingly grease and flour two 10-inch cake pans, ensuring your cakes come out effortlessly.
  3. In a generously sized mixing bowl, beat the large eggs until they become light and airy. Gradually incorporate pure white sugar, high-quality vegetable oil, and the essence of pure vanilla. Now, stir in the drained crushed pineapple.
  4. In a separate bowl, unite the versatile all-purpose flour, premium baking soda, fine salt, and aromatic ground cinnamon. Gently fold this dry mixture into the wet amalgamation until every ingredient is harmoniously absorbed. To this union, gently add the lovingly prepared carrot mixture and the coarsely chopped walnuts. Carefully distribute this blissful mixture evenly into the awaiting cake pans.
  5. Allow these wonders to bake in your preheated oven for a duration of 45 to 50 minutes, or until a toothpick inserted into the heart of the cake emerges clean and content.
  6. Once they have achieved their culinary destiny, allow the cakes to cool for 10 minutes in their pans. After this, lovingly remove the cakes from their pans and let them achieve complete coolness.
  7. Now, it’s time to elevate your creation with a crown of cream cheese frosting. Spread this luscious frosting generously across your cakes, turning them into a work of art that’s equally tantalizing to the eyes and the palate.

If this delightful creation has captured your heart, we invite you to relish, share, and spread joy. Your happiness is our inspiration!
